Garbanzo Salad Sandwiches, Veggie Pizza, and Teriyaki Tofu Stirfry

Today I made Garbanzo Bean Salad Sandwiches, veggies incorporated into the salad this time were green onions and bell peppers... I toasted some bread, slathered one side with AVK's Cheezy Mayo, slathered the other side with vegan mayo, topped with the Garbanzo Bean Salad, seaweed seasoning, romaine, and tomato.
Next up was some leftover pizza from this weekend served up with some Vegan Ranch. The pizza toppings included Tofurkey Italian Sausages, red onion, spinach, mushrooms, bell peppers, and a few slices of tomato. I used TJ's refrigerated pizza sauce and TJ's refrigerated whole wheat pizza dough... Shit's bomb!
Lastly, I cooked up a Cornstarch Coated Teriyaki Tofu and Broccoli Stirfry for a coworkers lunch tomorrow ($5) and some leftovers for me to indulge in.

Vegan MOFO: Vegan Ranch

Today the only food item I made was some Vegan Ranch so I will have some to slather on tomorrows Rainbow Salad. I love homemade vegan ranch and praise God for the invention of Vegenasie (I use the Reduced Fat variety, can't even tell the difference) I can't imagine eating a salad not covered in the stuff!

Today I consumed:
Breakfast: Odwalla Vanilla Soy Protein Drink
Lunch: Wahoo's Banzi Veggie Bowl with black beans and a side of guac + iced black tea (from work)
Dinner: Rainbow Salad slathered in vegan ranch, leftover Viva Vegan Drunken Beans with Seitan Chorizo + Silk Organic Vanilla Soy Milk

Rainbow Salad

I love salad people! I eat it almost everyday drenched in Vegan Ranch. I always make a bunch at a time (Think 3 heads of romaine) and put it in a gallon sized ziploc so I can have a quick and amazing salad with only 1 days worth of chopping!
Here's my salad for this week: Romaine, Red Bell Pepper, Green Onions, Black Olives, Purple Cabbage, Carrots, Corn, Edamame, Black Beans (I add these day of so they don't get gross), and Grilled Teriyaki Tofu... Delish! I also really like peas in my salad but was sadly out.

CPK's Veganized Barbecue Chik'n Pizza

I made my favorite pizza again last night... CPK's Veganized Barbecue Chik'n Pizza! I didn't have red onions so I used some white and green. I am also pretty much over vegan cheese substitutes so I left my pizza cheeze free and globed on some Vegan Ranch... Perfection!

Delicious Bagel Spread & More Vegan Nachos!

Today I was busy making a batch of both Red and White Seitan and Empanadas from my Viva Vegan! cookbook so that I would have leftovers to use up this coming week. I really love this cookbook, so sorry that I can't seem to shut up about it.

So today I kept the meals I actually ate pretty easy.

For breakfast I had a bagel, smothered in vegan cream cheese (Tofutti Brand) and topped with a mixture of half a mashed banana and some strawberry jam... Yum!


For lunch I had some more Vegan Nachos, topped with some unusual extras like pan fried Red Seitan and Pickled Red Onions, both from Viva Vegan!



Dinner was a few of the Empanadas I made today, served up with a delicious green sauce  from Viva Vegan! called "So good, so green dipping sauce (Green aji sauce)." This sauce is awesome with the Empanadas and also makes for a good salad dressing. The sauce is a mix ingredients such as lime, cilantro, green onions, romaine lettuce and vegan mayo. I added probably double the amount of vegan mayo called for though cause I love my sauces and dressings creamy.

Thick and Creamy Vegan Ranch


When I first went vegan I never thought I would still be able to still enjoy RANCH! Thick and creamy RANCH! Thank God I can or I wouldn't be eating many salads because it's just about the only salad dressing I like and I have tried TONS. Here is my perfected version of this recipe:

INGREDIENTS:

- 1.5 cups Vegenaise (vegan mayo)
- 1/4 cup vanilla almond or soy milk (not unsweetened)
- 1 to 2 tbsp red wine vinegar*
- 1 tbsp dried parsley flakes
- 1 tsp garlic powder
- 1 tsp onion powder
- 10 cracks fresh cracked black pepper

DIRECTIONS:

Put all the ingredients together in a blender or Magic Bullet and blend.

* 2 tbsp gives you a really tangy ranch. I like it this way but you can taste the vinegar.

The Witchy Kitchen's Beyond Easy Dinner Rolls and Vegan Caesar Salad

Dinner Rolls:

So I have been checking out this blog lately called The Witchy Kitchen and decided to make some Beyond Easy Dinner Rolls along with some caesar salad for a simple lunch. Oh my, these rolls turned out fantastic!


To make these rolls vegan, I substituted the egg using Ener-G replacer for 1 egg (1.5 tsp Ener-G mixed with 2 tbsp warm water). I also used black and white sesame seeds instead of poppy seeds because that's what I had on hand. Next time, I will use more "butter" to coat the top of the rolls since I skimped on it a little this time and buy some poppy seeds (the sesame seeds did not make the rolls taste bad or anything).

Caesar Salad:

I have to admit, I didn't whip up my own batch of caesar salad dressing because Follow Your Heart makes an entire line of salad dressings with many, if not most of them being vegan. I haven't tried all of them, but I can tell you for sure the Vegan Caesar, Vegan Honey Mustard, and Thousand Island Dressings are fantastic! I haven't tried a dressing from Follow Your Heart I haven't liked yet.

The additional vegan salad dressing flavors, besides the ones I just listed are: Sesame Dijon, Creamy Garlic, Lemon Herb, Sesame Miso, Organic Balsamic Vinegar, and Organic Italian Vinaigrette.
