So yes, it's not my typical dinner night at my Dad's, but he wanted me and my Sister over to celebrate our birthdays (Her's was the 22nd). My Step Mom cooked up some amazing vegan grub as usual and made a vegan birthday cake for me and my Sis (Vegan as well).
She made some amazing Flautas (Taquitos made with flour tortillas) stuffed with goodies like Soyrizo, baked potato, vegan meatballs, and peppers. Served with salsa and guacamole.
I also had a salad with romaine, carrots, olives, and baby corn topped with my favorite salad dressing: Private Selection (Kroger/ Ralphs store-brand) Poppy Seed!

Dinner at Dad's 6/11/10
This week at my Dad's, my Step Mom cooked up some yummy spaghetti noodles and flavored them Asian-style with some teriyaki sauce, tofu, and veggies. She also fried up some vegan egg rolls and wontons that I dipped in a mix of sriracha and sweet chili sauce.
I also tried mung beans for the first time and they were good! She made a thick soup-like dish with them and served it over some brown rice. Yes it looks gross but it tasted so good!
For dessert I tried another flavor of Trader Joe's vegan ice cream, Cherry Chocolate Chip, and oh my was it magical!

Dinner at Dad's 6/4/10
Another Friday and you know the drill... Wonderful vegan dinner courtesy of my fantastic Step Mom!
- Seasoned Rice Noodles
- Veggie Stirfry, with some kind of amazing sauce
- Sticky Rice
- Vegan Egg Rolls
I plan to cook a bunch this weekend so I have a variety of leftovers for quick meals this week (A necessity for us vegans). Hopefully, I will have some successful kitchen experiences to share soon!
This weeks menu:
- Garlic & Black Bean (Asian Flavored) Tofu- Seasoned Rice Noodles

Dinner at Dad's
Another Friday and another amazing meal courtesy of my Step Mom. This week we had:
Brussels Sprouts Stir Fry: Brussels + Bell Peppers + Onions + Spices
Seasoned Pinto Beans: Pintos + Tomato Sauce + Spices (I know she used a Bay Leaf)
Seasoned White Rice: Rice + Herbs (I know she used Cilantro) & Spices
Salsa Seasoned Tofu: Tofu + Salsa + Spices
She also made her specialty: Vegan Pineapple Upside Down Cake! She added some canned peaches along with the pineapple this time and it turned out great! This cake tastes best slightly warmed. I had mine with a bit if Trader Joe's Mango Vanilla Vegan Ice Cream.
My Step Mom also knows about my love affair with these amazing Sesame Seaweed Rice Balls from Trader Joe's! They have been out of these magical little puffs for months at TJ's and now there back! She of course did the smart thing and scooped up 5 bags (Hey they're only a buck).

Dinner at Dad's
Another Friday and another amazing meal courtesy of my amazing Step Mom. If I had enough money, I would pay her to be my personal chef. So hopefully I will win the lottery sometime soon because this little lady is worth millions! Sorry about the small pics but I didn't bring my camera :(
We had some amazing and huge burritos.
Filled with this amazing chipotle flavored veggie stirfry which consisted of potatoes, bell peppers, onions, garlic, and some amazing herbs and spices!
My Step Mom always makes the yummiest rice! This time she said she used some garlic and oregano and I am sure some other things as well.
She also made a stirfry with onions, tofu, and my new favorite mushrooms: Crimini! I left them out of my overly stuffed burrito, which was already the size of my head, but ate some on the side. Fantastic!
Last but not least, I managed to eat some Trader Joe's Vanilla and Mango flavored soy ice cream... And this stuff is goooooddddd <3 I am definitely going to pick up a few cartons next time I hit up TJ's.

Dinner at Dad's
Another Friday and another amazing vegan meal at Dad's. This week, my Step Mom cooked up some delicious Stuffed Peppers and a Vegan Chorizo & Potato type dish. The Stuffed Peppers are jazzed up a bit with a salsa and Tofutti Cream Cheese mixture.
I also had some salad with one of my favorite dressings... Poppyseed! I love Ralph's (Kroger) store brand Poppyseed Dressing, it's the bomb!
I had Pinapple Upsidedown Cake for dessert but inhaled it before I got to take a picture, sorry. Can't wait to see what she serves up next week!

Dinner at Dad's
After my first week of work at my first full-time job I was pooped. I was looking forward to my weekly dinner at my Dad's house. My Step Mom is hands-down THE BEST COOK EVER... You know one of those people who can throw a bunch of ingredients together and make an amazing dish without a recipe... My Step Mom is pretty much vegan too! Yep good old Skinny Bitch converted her.
So from this day forward, every week I'll post the pics of the awesome food I get to eat courtesy of my Step Mom <3 She really is the greatest!

Easter Dinner
I had a fantastic Easter this year! My Dad and Step Mom are starting to get into this vegan thing and almost all the dishes were vegan! The vegan items included: Bryanna's Soy and Seitan "Turkey", mashed potatoes, gravy, sweet potatoes (coated with "butter" and brown sugar), carrot and onion stir-fry, stuffing, salad with poppy seed dressing, and Pineapple Upside Down Cake for dessert!
This is by far the best holiday meal I have had as a vegan and I love that some members of my family are being so supportive! I hate when all there is for me to eat is basically whatever I cart over and a salad. Sorry I don't have too many pictures of all the goodies I got to eat. I was halfway through my dinner when I realized I forgot to take pictures!
Bryanna's Soy and Seitan "Turkey" turned out fantastic and I will be using this recipe again for the next holiday get together! I used Method #1, hand kneaded my "turkey" dough, and baked my "turkey" in a 2.5 quart Corningware Casserole dish. The texture was fantastic, it had the exact same texture taste of turkey. My only suggestion for this recipe is reducing the amount of Bryanna's Homemade Vegan "Chicken-Style" Broth Powder used... The flavor was too overpowering on the outside of the "turkey" but the inside tasted much better. Bryanna says to use 1/3 cup broth powder for 2 cups of water, next time I am going to try using only 4 teaspoons of broth powder (The regular amount used when using the broth powder in other recipes).
