Online Recipe Reviews: Buffalo Tofu Sammies, Melty Cheese, Cauliflower Poppers, and Pad Thai

I love the internet and I love saving trees whenever possible by looking up online recipes and refraining from printing them out to add to my massive "Online Recipe Book/Binder"... I learned how to cook this way and met some awesome vegans in the process! VegWeb.com was where I got started (I don't log in much anymore due to some fucked up viruses that are supposedly not an issue anymore) and learned the skills I needed to be self sufficient :)


The 2 pictures above are of a Buffalo Tofu Sandwich (I had leftover homemade buffalo sauce from Spork Fed that needed to be used up)... Can't even imagine store bought slathered on this but my bestie said these were amazing even with the store bought buffalo sauce!


Melty Cheese from VegWeb is my go to "Nooch" sauce... Love me some vegan nachos... Sinfully delicious always! I almost prefer it to Daiya sometimes as I prefer homemade grub :)

Cauliflower Poppers from VegWeb are also a staple at the pad... You seriously know you are awesome when your drunken munchies consist of cauliflower... LOVE THIS RECIPE... Don't even measure anymore... Something to remember: If there is too much liquid left in the pan when the cauliflower is done cooking dump it out near the end and brown the cauli a little. (I have been pan frying these a lot more recently than roasting because it is quicker)


Lastly, Pad Thai! Love 2 recipes, one of which my future husband, The Vegan Zombie, created and the other HERE (Which I photographed).

VegWeb's Cauliflower Poppers & More Grilled Teriyaki Tofu

When I have a big head of cauliflower to use up, I typically rely on two recipes, either VegWeb's Cauliflower Poppers or VegWeb's Oven Roasted Cauliflower with Rosemary and Garlic. Both always turn out amazing though I always add extra of the ingredients they list though cause I like things super saucy and flavorful. My Cauliflower Poppers came out amazing as usual!
I have also been making my Grilled Teriyaki Tofu bu the boatload! I love to eat it plain or in salads as it tastes best cold. I made two tofu bricks worth last night and it's already a third gone!

Vegweb's Oven Roasted Cauliflower with Rosemary and Garlic


If you love cauliflower, or at least like it, try this recipe: Oven Roasted Cauliflower with Rosemary and Garlic! Please follow the directions and let your cauliflower marinate. The first time I didn't let it marinate, I didn't like this recipe much, the second time I did let it marinate and WOW! Very delicious!

Easy Peasy Island Teriyaki Stir Fry

 Trader Joe's has some awesome sauces to choose from! This trip to TJ's I bought some Hawaiian flavored teryaki sauce called Island Soyaki. If you don't have a TJ's near you try to find Soy Vay Island Teryaki Sauce, it tastes exactly the same and I can find it at almost any grocery store around here.

Also, if you eat a lot of tofu please buy yourself a Tofu Press already!!! These things are so awesome! No more wasting paper towels, waiting for your tofu to press, finding heavy objects to press your tofu with, ect. I just put a block of tofu in my tofu press in the morning and left it in the fridge. This makes dinner making much faster when I get home from a long day of work.

Anyways on to the "Recipe"...

Ingredients:
- 1 block extra firm tofu, pressed and cut into cubes
- 6 handfuls cauliflower, cut into bite-sized chunks
- 1/2 a white onion, sliced to your liking, I prefer thicker slices
- 1/4 cup green onions, thinly sliced
- 1/2 cup Island Teryaki Sauce
- A few tablespoons of oil for frying

Directions:
- Fry up tofu in a tablespoon or so of oil until golden
- Add cauliflower chunks and another tablespoon of oil if needed, cook for a few minutes just to begin the cooking process.
- Add sauce and cook until the cauliflower starts to look closer to being done. Add sliced white onions.
- When your cauliflower is done cooking and the sauce has been pretty much absorbed, turn off the heat and add the green onions. Stir to coat everything evenly.

Barbecue Tofu, Califlower Poppers, Mashed Potatoes and Gravy


Tonight I felt like mashed potatoes and barbecue tofu. I had a head of cauliflower that needed to be used up as well so I made Cauliflower Poppers.

I used THIS RECIPE I posted on VegWeb awhile ago for the mashed potatoes.

I used THIS GRAVY RECIPE from My Veggie Kitchen. I made my gravy on the stove though instead of using the microwave.


I used my typical technique for the Barbecue Tofu. I pressed the tofu (With my new Tofu Press!), cut the tofu into cubes, put the tofu in gallon-sized ziploc with about 1/4 cup of cornstarch, fried the tofu in some oil until golden, turned off the heat and added about a cup of barbecue sauce and stirred to coat.

***** If you have leftover mashed potatoes that are no longer creamy enough, mix in some vegan mayo and the creaminess shall return!*****

VegWeb's "Beef" Teriyaki Stir Fry & Cauliflower Poppers

 

I have made this recipe for "Beef" Teriyaki Stir Fry off VegWeb a few times now. I always switch up the veggies to what I have on hand. This time I used a few cups of frozen broccoli, about half a pound of halved baby carrots, 1/4 a white onion, and 1/2 a red bell pepper.

I think the seitan needs to be cooked a bit longer in the oven as mine was a bit chewy this time (Though maybe my pieces were too big... I might do 20 minutes in the oven next time flipping after 10). I also added 1/2 cup water to the sauce to make it saucier and used about 1 tablespoon powdered ginger since I didn't have fresh. Good recipe just watch out for chewy seitan.


Cauliflower Poppers is one of the recipes off VegWeb I make almost weekly. I never measure anything anymore and definitely add more dijon mayo and dill than suggested since I always tend to like things that are drenched in flavor. I also use cooking spray instead of olive oil to keep the veggie dish fat free like it should be!
